World-Renowned French Chef Opening Vegetarian Restaurant!
This September, world famous French chef Jean-Georges Vongerichten will open his first vegetarian restaurant, called abcV. According to Grub Street, it will be the third and smallest collaboration between the chef and ABC Carpet & Home CEO Paulette Cole, meant to “celebrate roots and shoots and leaves without trying to mimic meat.” He told NY Post:
“We are not going to have a vegetable burger. We’re not going to make vegetables look like meat. Vegetables themselves, mushrooms, grains, roots, will be the stars.”
Vongerichten is not a fan of vegetarian/vegan labels and stated:
“For me, it sounds like a disease. I like to call it a vegetable restaurant. Wait until you try our kraut.”
The restaurant will include a breakfast, lunch, and dinner menu with a to-go counter and a juice bar. There will be a “global approach” with “buckwheat crepes, dosas, congee, and the South Asian lentil-and-rice dish called kitchari.”
The restaurant is located at 38 East 19th Street, near Park Avenue South in New York, and is set to open next month!
