'People' Editor Reviews Novak Djokovic's Raw Vegan Lasagna
Tennis star Novak Djokovic, who recently opened a vegan restaurant called Eqvita in Monte Carlo with his wife Jelena, knows first-hand the importance of clean eating, especially when it comes to his active and competitive lifestyle.
The U.S. Open champion experienced very significant changes to his overall health and fitness when he cut out dairy, gluten, sugar, and eventually meat from his diet, after consulting with a nutritionist. Of the change, he stated:
“I took [it] to another level and I feel better than I ever did before. I’m excited to be–at this level–a vegan athlete.”
As Djokovic considers Eqvita to represent his and Jelena’s “passion for healthy food,” it should come as no surprise that the restaurant features raw, vegan and gluten-free dishes. Recently, People editor Catherine Kast tried the raw vegan lasagna from the restaurant’s menu, one of “Djokovic’s favorites,” and decided to recreate the dish for her skeptical husband. She stated:
“I loved it so much that I decided to try it for my tennis-obsessed (but not health-obsessed) husband. He ended up cleaning his plate! Because there is protein in the nuts and lots of fiber in the veggies, it’s filling, but it’s the fresh flavors of the three different sauces that make each bite totally satisfying.”
