New Cookbook Dedicated to Vegan Eggz!
Skye Michael Conroy, chef and author of Seitan and Beyond, has released a new cookbook–this time focusing completely on vegan eggz! Titled The Vegan Eggz Cookbook, Conroy described it as:
“A culinary guide to creating a wide variety of plant-based egg alternatives which closely approximate the aesthetic qualities of real cooked eggs and egg-based foods.”
Some of the recipes featured on the website include scrambled eggz, omelets, poached eggz Florentine, eggz frittata, and eggz made over-easy. The photos of the dishes look incredibly similar to those you would expect to find from chicken eggs, and most recipes include Vegan Eggz Essentials, a two-ingredient powder created by the chef that “work synergistically to set the eggz mixtures when cooked.” Conroy states:
“My new recipes using Vegan Eggz Essentials are the result of my quest to create home-prepared egg alternatives that have the appearance, flavor and texture of real eggs but which can also be cooked like real eggs. The exciting thing about these alternatives is that they are easily prepared using soymilk or almond milk and can be customized for different culinary purposes.”
