Plant-Based Meal Kit Company Purple Carrot Partners with Forks Over Knives
On January 5, a new partnership was launched between plant-based meal kit company Purple Carrot and Forks Over Knives. While Purple Carrot has offered its customer base portioned vegan meals since 2014, this partnership includes a new plan that is Forks Over Knives-approved, which is fitting since the documentary inspired Purple Carrot CEO Andy Levitt to leave his longtime career in pharmaceuticals in order to launch the company. According to the press release:
“The Forks Over Knives approved meals by Purple Carrot are specifically designed to meet the Forks Over Knives diet guidelines, and include fresh, pre-portioned ingredients and simple step-by-step guidance for people to cook distinctive, healthy, plant-based meals at home in 40 minutes or less. Modified from Purple Carrot meals, all recipes are centered on whole plants and exclude highly refined foods like bleached flour, and added oils.”
Levitt states that Purple Carrot “empowers people who want to consciously and easily integrate plant-based eating into their life,” and believes that this partnership will expand on that. He adds:
“Even if it’s only a few times per week, eating plant-based meals have a positive impact on both your health and the environment. Through the Forks Over Knives partnership, we hope to successfully expand our plant-based approved meals to members of their community or anyone who has been inspired by the Forks Over Knives documentary.”
And what are some of the sample meals subscribers can expect from the modified meal kits? Mapo tofu with steamed bok choy and brown rice, an Ethiopian platter with berbere lentils and beet pickles, and fabcakes (a vegan version of crabcakes, pictured below) with collard slaw and Old Bay aioli. All meals come with nutritional information and time estimates for preparation and cooking.
