Carrie Underwood Joins List of 'Aspiring Vegan' Celebrities
In a recent feature on Self, singer and actress Carrie Underwood elaborated more on her diet and listed some of her favorite plant-based meals and on-the-go snacks. She joins celebrities Ellie Goulding and Christie Brinkley in adopting a “near vegan” diet or, as Jared Leto refers to it, being a “cheagan.”
Underwood stated that the change in her eating habits developed when she realized that the cows her family raised on their farm growing up would be slaughtered for meat:
“It just freaked me out and that was that. I didn’t become vegan right away, but I quit eating beef and didn’t eat a whole lot of other meat. And when I was on American Idol, being in California, there were all these places that had vegan food, and I was like, ‘Oh my gosh, this is easy here!'”
The article adds that the singer became completely vegetarian by the age of 22, and now keeps a mostly vegan diet. She stated:
“I want to be vegan so badly, all the way, 1,000 percent. But traveling and stuff, it just kind of gets hard. Sometimes I may have to do some egg whites or something for breakfast.”
She lists some of her favorite vegan options, including muffins, tofu scrambles, roasted vegetables and spaghetti squash, and how she incorporates plant-based substitutes like burgers and chicken to her meals, adding that as a result, all of her food “has little air quotes around it.” To read the entire feature, visit this link.
