New Vegan Restaurant Underestimates Demand, Temporarily Closes
J. Selby’s, a new vegan restaurant that opened in St. Paul on April 17, temporarily closed its doors for one of the best reasons ever–the spot ended up being too busy. The restaurant, which features delicious comfort foods like vegan buffalo wings and corn dogs with sweet treats like brownies and a SoyClone, thanked all customers for an “amazing response” to the opening, and noted that the staff was “caught off guard by the overwhelming need for a place like J. Selby’s,” and on April 23 posted on Facebook:
“Hey friends, a quick update for you all: We will NOT be open tomorrow or the next day. We underestimated the demand and we are hiring additional staff to better accommodate those who come to eat with us. We want to create an experience you all deserve, so we’ll let you know when we are opening again! Hopefully later this week!”
Joking that the “love was too much,” J. Selby’s promises its new loyal fanbase that while there is no set “date just yet,” it “will be open again soon.” To stay up to date on the reopening, make sure to follow J. Selby’s on Facebook.
