The Herbivorous Butcher: Food Truck in the Works!
A visit to The Herbivorous Butcher is on the bucket list of most vegans–and for good reason. Located in Minneapolis, Minnesota and with celebrity fans including Jon Stewart and Guy Fieri, the menu includes teriyaki jerky, Korean ribs, maple glazed bacon, filet mignon, porterhouse steak, with dairy-free cheeses such as cheddar, mozzarella, smoked Gouda, and garlic pepper Havarti.
Now, according to a recent interview in Mpls St. Paul, the butcher shop has announced its plan to go mobile. Co-owners and siblings Aubry and Kale Walch confirmed that they bought a food truck, with the magazine adding:
“It is being wrapped and readied, and will be on the streets of downtown Minneapolis in June. They plan to get it licensed for both cities, so it will get to St. Paul as well. Expect to see it all summer at breweries and festivals in both towns.”
As for the menu? Kale offers us a glimpse:
“We did a take on Kentucky Fried Chicken’s Double-Down for a food festival in Los Angeles. It came out really, really well.”
Summer cannot come soon enough!
