Trejo’s Tacos: Vegan Cauliflower Option Ranked #2
Today the focus is back on his restaurant. All of his tacos–which include three vegan options–were recently ranked by Steffi Victorioso of Los Angeles Magazine.
Considering that the “vegan rainbow cauliflower tacos have become one of the most popular items on the restaurant’s menu,” the results of the taste test should come as no surprise.
Within the 12 slots, the Mexi-Falafel (falafel, kale, cashew cream, and pickled onions) came in at #8, the Jackfruit (jackfruit, avocado cream, slaw, and pico de gallo) made it to #7 and the Cauliflower was the runner-up at #2:
“Never judge a vegan taco before you eat it. Case in point: the cauliflower taco was an unexpected favorite. The roasted cauliflower, sweet corn, cashew cream, pickled onions, and chopped cashews inside the taco made it impossible to put down. It’s nutty with sweet, sour, and savory notes.”
If your mouth is watering from that description, you can find the recipe for the Cauliflower taco here. For the skeptics, Victorioso adds:
“Trejo might make a vegan out of you yet.”
