ONIONS AND RED CHICORY OMELETTE

Ingredients:
-100g of chickpea flour
-300ml of water
-100g of red chicory
-1 small golden onion
-extra virgin olive oil
-salt

Directions:

Put the chickpea flour, the water, a spoon of olive oil, and some salt in a bowl. Stir well with a hand whisk and cover with a lid. Leave it rest for 30 minutes. In the meantime chop the golden onion and put it in a pan with some olive oil. Cook for a couple of minutes over low heat. Make sure to stir it frequently. Turn of the burner. Now add the red chicory cut into thin slices and some salt. Mix everything up. Add some salt and stir well. Transfer the veggies to the bowl with the chickpea batter and mix well. Make sure the pan is greasy and pour the batter. Cook each side for 15 minutes over medium heat. Use a lid to flip the omelet. Leave it cool for at least 30 minutes and serve.
