Yields: 1 vegan McMuffin
Here’s what I stick with in terms of ingredients. Changing things up may or may not work out so well.
1. Gardein breakfast patties – QFC / Kroger’s has a brand that also works, but I find it to not be as good
2. Daiya cheddar style slices – this is probably the most important ingredient to be wary of replacing. The Daiya cheddar works really well as a replacement to American cheese for sandwiches/burgers, and also mac & cheese. I dislike most other vegan cheeses, so definitely seek out the Daiya. However my favorite vegan cheese hands-down is Field Roast Chao, and any of their varieties are a good alternative on vegan McMuffins.
3. Whole Foods organic plain English muffins – These are consistently good, and it’s not always easy to find vegan English muffins. Look for the red package at Whole Foods.
Start with putting the English muffin in the toaster, because that’s what’s going to take the longest.
You now have a choice to cook up the breakfast patty on the stove, or microwaving it. Frying up on the stove will always make a better sandwich, but I usually just want to make 1 sandwich for myself as fast as possible. If you’re cooking 3 or more (for hungry kids, etc) then cooking them all together in a frying pan will probably be easier with fewer steps.
For this recipe we’re going to use the microwave.
Next put the Gardein breakfast patty in a flat-bottomed bowl, and microwave for 1 minute. After that flip the patty over and microwave for another minute. Note that the microwave instructions on the Gardein package may be slightly different, and every microwave is different so adjust cooking times to what feels right.
Take a slice of Daiya cheddar cheese and put it on the patty, and then microwave for 10 seconds.
The bowl might be hot now, so use an oven mitt or be careful removing from the microwave. I usually use a fork to lift out the patty with melted cheese on top.
Put the sandwich together and eat it! Note that the sandwich might be especially hot right after cooking, so if cooking for kids make sure to let it cool down for a few minutes before serving.
One last secret: sometimes I’m perfectly happy with the sandwich with these 3 ingredients, but sometimes I drizzle a tiny bit of maple syrup on one of the sides of the English muffin before putting it all together! Don’t knock it ’till you try it!
