Chocolate-Covered Dates!

This is one of my favourite recipes to create, and combines bitter dark chocolate with the sweet dates, and allows for some experimentation for additional toppings since the chocolate is heated. Make these in bulk and have access to a healthier alternative than store-bought chocolate right in your home!

Yields: 20 Servings
Instructions:

Ingredients:

1 package dark chocolate
1 package Dates (can use as many as you like)
5 tablespoons Coconut flakes (unsweetened is best)
30 grams walnuts (can make into a powder)

Steps:

Begin by simply putting your dark chocolate of choice (you can also make your own!) in a container to be double boiled!
Begin the double boiling! I keep it on low heat to make sure the chocolate doesn’t burn and then become too thick of a consistency. Once it’s all melted, it’s ready!
Get your prep station ready for some date rolling! You can actually pit them while your chocolate is being heated to save some time. I used them like this but you can also insert almonds or walnuts into them for a protein-kick! I chose to coat my dates in coconut flakes and walnut powder (separately), but you can use any spice or flavour you prefer!

Once the chocolate is melted and your prep-station is ready, simply take the pitted dates one by one, dip them in the chocolate, then quickly roll them in either the coconut flakes or the walnut powder. When the temperature is cool, the chocolate sets immediately and you can place them in a container or tray without a mess! Line them up, eat a few, and keep the rest sealed in your fridge for instant sweet tooth-access!

Other options for toppings can include cinnamon powder, crushed pistachios, cardamom powder or goji berries!
