Tofu Scramble

I love tofu scrambles. You can pretty much incorporate any leftovers veggies and use them in the scramble. My favorite though, is using spinach and mushrooms.

Yields: 4 Servings
Instructions:
Heat a large skillet to high heat and add the oil. Add the onion and garlic, stirring constantly so the garlic doesn’t burn. Saute’ until onions are translucent, then add mushrooms and continue to cook until the mushrooms are golden brown.

Next add in prepped tofu (tofu that has been drained and patted dry, then crumbled) into the pan. Add all seasoning and remaining ingredients. Saute and stir often for 5 more minutes, or until tofu is dry and slightly browned.

Ingredients:

1 pound tofu (Drain and pat dry tofu. Crumble into a bowl. Set aside for cooking. )
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon tumeric
1 cup Chopped onion
2 cloves garlic- minced
1 cup mushrooms- chopped
1 cup spinach- fresh
1 tablespoon olive oil
2 tablespoons nutritional yeast
2 teaspoons Italian seasoning
