|2 cans||Faux Tuna (Drained)|
|750 grams||Four Bean Mix (Drained, rinsed)|
|4||Tomatoes (Deseeded, chopped)|
|2||Celery Sticks (Trimmed, finely chopped)|
|1||Small Red Onion (Thinly sliced)|
|1 cup||Flat-leaf Parsley Leaves (Chopped)|
|1||Large Lemon (Rind finely grated, juiced)|
|1||garlic cloves (Crushed)|
|1 tablespoon||Extra-Virgin Olive Oil|
|1⁄2 teaspoon||Caster Sugar|
Flake faux tuna and place in a large bowl. Add beans, tomato, celery, onion and parsley.
Make lemon dressing: Combine lemon rind, 2 tablespoons lemon juice, garlic, oil and sugar in a screw-top jar. Secure lid and shake until well combined.
Pour dressing over salad. Season with salt and pepper and stir to combine. Serve.
